Wasabi Guacamole with Pickled Ginger

If you like sushi, you’ll love this guacamole makeover! The creaminess of the avocado mellows the heat of the wasabi.

Ingredients:

1 teaspoon wasabi powder
3 avocados
2 limes
2 tablespoons chopped pickled ginger
1 tablespoon brine from the pickled ginger jar
1 finely chopped seeded jalapeno
3 thinly sliced scallions
3 tablespoons chopped cilantro
1 teaspoon kosher salt

Directions:

  1. Mix 1 teaspoon each wasabi powder and water; set aside 15 minutes.
  2. Scoop the flesh of the avocados into a large bowl and mash with a fork. Add the juice of the limes, pickled ginger, brine, jalapeno, scallions, cilantro and kosher salt.
  3. Add the wasabi mixture and stir to combine. Season with salt. Serve with rice crackers.
