Corn Cob with Spicy Cilantro Butter

This corn on the cob recipe is a sweet, crunchy, fiery, juicy (and often) messy taste of summer.

Ingredients:
3 tablespoons unsalted butter
2 tablespoons chopped fresh cilantro
1 teaspoon grated lime zest plus wedges for serving
1 red jalapeno pepper seeded and chopped
4 ears of corn, husked
Salt and pepper

Directions:
Step 1: Preheat your grill. Mix the butter with cilantro, lime zest, jalapeno and salt and pepper in a small bowl and set aside.
Step 2: Grill the corn, turning occasionally until tender. Remove to a platter and smear with the cilantro butter. Squeeze the lime wedges on top and serve.
