Bring home the flavors of the Caribbean with these Jerk Chicken burgers, served with fresh and spicy mango salsa.
(serves 4)
For the burgers:
For the salsa:
Build a medium-hot temperature fire in a charcoal grill or heat a gas grill to medium-high. Brush grill grate with olive oil.
While grill heats, combine ground chicken, Tamari sauce, spices, and brown sugar in a large bowl. Drizzle in a small amount of olive oil. Mix well to combine. Gently shape into 4 patties.
Place patties on the grill and cook for 8 minutes and flip over. Grill for approximately 5 minutes more, or until the burgers reach an internal temperature of 165 degrees. There should not be any pink in the middle.
While the burgers are on the grill, make the mango salsa. In a small bowl, combine the mango, red pepper, red onion, cilantro, and jalapeno. Season with salt. Drizzle with lime juice to taste. Set aside and let sit for at least 10 minutes before serving.
Serve burgers on a gourmet burger bun or ciabatta roll with lettuce and a heaping spoonful of mango salsa.
