Beef and Beefsteak Tomato Salad

A pleasant, simple salad for summertime weeknight cooking.

Ingredients

  • 1/2 lb orzo
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 3/4 tsp garlic salt
  • 3/4 tsp black pepper
  • 1 lb beefsteak tomatoes
  • 4 oz fresh mozzarella
  • 1 small sliced sweet onion
  • 1/4 cup sliced basil
  • 1 1/4 lbs boneless sirloin

Directions

  1. Cook orzo following package directions. Drain and cool.
  2. Whisk olive oil, lemon juice and 1/4 tsp each garlic salt and black pepper. Stir into orzo.
  3. Add beefsteak tomatoes cut into chunks, fresh mozzarella cut into cubes, sliced sweet onion and sliced basil.
  4. Season boneless sirloin with 1/2 tsp garlic sat and 1/4 tsp black pepper.
  5. Grill or broil 4 minutes per side for medium-rare. Slice and serve over orzo.
